Chicken Fajita Mac and Cheese

Ingredients
macaroni500g
chicken stock2 cups
heavy cream1/2 cup
fajita seasoning1 packet
salt1 tsp
chicken breast3 diced
olive oil2 tbsp
onion1 small finely diced
red pepper2 finely diced
garlic2 cloves minced
cheddar cheese1 cup
parsleygarnish chopped
Instructions
Step 1: Fry your onion, peppers and garlic in olive oil until nicely translucent. Make a well in your veg and add your chicken. Add your seasoning and salt. Allow to colour slightly.
Step 2: Add your cream, stock and macaroni.
Step 3: Cook on low for 20 minutes. Add your cheeses, stir to combine.
Step 4: Top with roasted peppers and parsley.
